turkey Meat Sauce
One Sauce- Multiple Uses!
(sorry for the poor photo quality on some of these pics. the lighting in my new apartment isn't great and i'm still trying to figure that out).
Loaded with flavor and light on the calories, this turkey meat sauce is sure to please. It's got a little spice, a little heat, and a whole lot of flavor. I chose to add white wine to the sauce because I enjoy drinking white wine. Make sure that you pick a wine that you would want to drink because that's the flavor you'll be adding to your food (aka don't pick the cheapest wine at the store). The sauce is finished at the end with some fresh parsley for added flavor, color and overall brightness as well as some parmesan cheese for added creaminess and saltiness. This sauce can be used for a variety of meals, making weekly menu planning easy as pie! See below for two uses for this sauce. Happy cooking.
INGREDIENTS:
1 tbsp extra virgin olive oil
1 lb lean ground turkey
1 tbsp chili powder
1 tbsp extra virgin olive oil
1 medium red onion
1 green bell pepper
2 cloves of garlic, minced
1 tbsp italian seasoning
1/2 cup dry white wine
1 14.5 ounce can crushed tomatoes
1 14.5 ounce can diced tomatoes
1 squirt sriracha
1/4 cup grated parmesan
1 handful flat leaf Italian parsley, roughly chopped
Salt and Pepper
INSTRUCTIONS:
Heat a large saute pan with the olive oil. When oil is hot, add the turkey and season with chili powder, salt and pepper. Be sure to break up the turkey into small, bite sized pieces. Not too small that it can't fit on a fork, and not too large that you couldn't eat a chunk in one bite. Allow the turkey to cook through. In order to avoid over cooking the turkey, take out of pan and let rest on a plate with a paper towel to soak up any excess grease.
Add another tablespoon of olive oil to the pan and add the onion and the bell pepper. Allow the onion to sweat out and become translucent. At this point, you can season the veggies with Italian seasoning, salt and pepper, and add in the garlic and the ground turkey you set aside earlier.
Deglaze your pan with the white wine, making sure to scrape up all the little bits stuck to the bottom of your pan (I would highly suggest NOT using a non-stick pan, in order to get the most flavor out of this sauce). Allow the wine to reduce in the pan and the alcohol to cook out. Then add the tomatoes and season with the sriracha sauce. Season the sauce to taste with salt and pepper. Cover and allow the flavors to meld together and simmer for a minimum of 15 minutes. The longer you let it sit the more flavorful it will become.
Right before you are ready to serve, add the parsley and parmesan cheese. Bon appetite!
