Banana Oatmeal Bread
I don't know about you, but I LOVE banana bread. I thought I'd mix things up a bit and make a banana bread that was a little bit heartier. Loaded with heart healthy, whole grain oats and cholesterol lowering cinnamon, this recipe is a no brainer when it comes to satisfying your sweet tooth. Just to give you a heads up, this banana bread is definitely on the dense side, but the flavor is there and makes for a filling snack! To make this banana bread, wait for your bananas to become over-ripe, pull out your mixer, and get baking! From start to finish this recipe should take about an hour to prepare.
INGREDIENTS:
1 1/4 cup all-purpose flour
1/2 cup unpacked brown sugar
1/2 tsp salt
1/4 tsp baking powder
1/2 tsp baking soda
3 tbsp butter, melted
1 large egg
2 large egg whites
3 large bananas (ripe)
1 cup old fashion oats, uncooked
INSTRUCTIONS:
Preheat the oven to 350 F. In a large bowl, whisk together dry ingredients (flour through baking soda).
Add the oil and egg and mix well.
In a smaller bowl (or using your hand / kitchen aid mixer) mash bananas. Add the bananas and the oatmeal to the batter and stir.
Spray a standard size loaf pan with cooking spray and pour batter into pan.
Bake until a toothpick comes out of the center of the loaf clean, about 45-50 minutes.
Allow to cool in pan for about 5 minutes and allow to cool on a baking rack for 10 minutes.
